You want John Berryhill's Chili with Berryhill Bacon 🥓
4 lbs. ground beef
1 chopped yellow onion
2 cloves chopped garlic
2 pinches dried oregano
2 pinches cumin
3 tbs. chile powder
2- 16 oz. cans chopped tomatoes
2 cups hot water
4 chopped green bell peppers
4 chopped red bell peppers
12 strips chopped Berryhill Bacon
2 chopped jalapenos
Salt and fresh ground pepper, to taste
MethodIn a heavy bottomed stock pot, sear the meat with onions and garlic. Add in the oregano, cumin, chile powder, tomatoes and hot water then bring to a boil. Reduce heat then let simmer for an hour. Skim the fat, add chopped peppers and chopped Berryhill Bacon, then salt and pepper to taste, and let simmer for another 15 minutes.
